The Absolute BEST Way To Bake A Potato

If you think my title is hyperbole, you are WRONG. This is seriously the best way I've ever had a baked potato. Basically, you slather a washed and dried potato in olive oil, sprinkle some salt on it and throw it on an oven rack. Super simple and super super super delicious! The skin will be the best part of the potato!! You read me right. The skin is the BEST PART. 

Okay, let's get to it, shall we? First, make sure you wash your potatoes well and let them dry as much as possible.
While they dry, get two shallow bowls ready--one with olive oil in it and the other with salt or the seasoning recipe that I provide.

Mix all that yummy seasoning together. Because I use brown sugar, I use my hands to mix it so the lumps go away and mix in with the rest of the seasoning well.
Once your potatoes are dry, roll 'em around in the olive oil until they are totally coated one by one and place them on a plate.
Then sprinkle and rub the seasoning on each potato. You could also just roll them around in the seasoning one by one, but I prefer the sprinkle and rub method, personally.
Place a cookie sheet lined with aluminum foil on the bottom rack on the oven and place the potatoes straight on the middle rack right above it. (The baking sheet is for catching the drippings.)
Bake for about an hour. I take the little ones out after about 45 minutes so they don't get chalky. The seasoning (whether you just use olive oil and salt or add the other seasonings) can be strong, so you can sort of dust off the potatoes before serving if you're worried about it. I like all the seasoning, but every once in a while, you get a pretty strong bite.

Top with whatever you like on your baked potatoes and enjoy!

Ingredients

5-10 Russet Potatoes
1/4 C Olive Oil
2 T Cajun Seasoning
2 T Brown Sugar
1/2 t Sea Salt
Butter, Sour Cream, Cheese, Green Onions (Optional)

Directions

1. Wash potatoes and let them dry.
2. Put olive oil in one shallow bowl and mix cajun seasoning, brown sugar, and sea salt in another.
3. Roll each potato in olive oil until completely coated, place on a plate. Sprinkle and rub seasoning onto each potato on all sides.
4. Cover a baking sheet with tin foil and place on the bottom rack of the oven. Place potatoes directly on the middle oven rack.
5. Bake at 350 degrees F for 45-60 minutes, depending on the size of the potatoes.
6. Top and enjoy!

These skins are crispy and so yummy! You can also make these potatoes with just olive oil and salt and they are still so delicious, you won't believe it. After you try these, you'll never want to wrap your potatoes in foil again!

  1. Love baked potatoes! My uncle taught me to bake them without foil, but I've never seasoned them first. I'll definitely have to give this a try!

    1. The seasoning really adds a great flavor but nothing beats the crispness of the skins from the olive oil!
